Strawberry, Avocado, and Mango Salad

What a week! From having my last two posts’ pictures featured on Foodgawker (and one on Tastespotting!), to having the honor of working with two great ladies from The Frugal Flambe and The Paleo Project in executing a 3-tiered guest post on all of our blogs, to being featured on the Foodbuzz’s Daily Top 9 two days ago, I am ecstatic! That may not seem like much to some, but for me, it’s beyond what I’ve ever imagined. Welcome, new readers! I hope you will enjoy this blog. And to the devoted readers that have been following me throughout these past six months, I cannot be more grateful that you have put up with my random thoughts and endless rants about life and food.

When I started this blog on January 1st this year, I never expected that anyone more than my close friends and family would read it. And I was fine with that. And then when I got featured on WordPress’s Freshly Pressed on my sixth post “Making Resolutions (and Diets) More Attainable”, I was so thrilled and shocked that I couldn’t wipe the smile off my face for days. And now, with people subscribing from all over the world, a girl really can’t ask for more! I always look forward to people sharing links to  their own blog or recommending recipes to me–it just keeps a wonderful cycle going, and it builds connectivity between individuals. I think it’s safe to say that food really does form bonds!!! :) The sense of community that has developed from this blog, along with every single reader, blogger, visitor and friend is simply astonishing.

So what I guess I am trying to say is: Thank you. Thank you for reading, being a part of my life, and making me a genuinely happier person because of this blog and all of your wonderful feedback. Even if we have never met, I feel connected to you.

This little fruit salad is fresh, inviting, and the colors just scream, “Summer has finally arrived!” It’s creamy, tangy, and sweet. Just a wonderful variation to your normal day fruit salad. It just makes me happy. Here is the recipe!

Avocado, Strawberry, and Mango Salad (adapted from Carrie over at Our Life in Food)

1 Avocado, diced
A handful of strawberries, husked and diced
1 Mango, peeled and diced
Small handful of cilantro, finely chopped
1/4 of a Lime, juiced
Salt and Pepper

Combine avocado, strawberries, mango, cilantro and lime. Mix together gently. Add salt and pepper to taste, and enjoy!

Oh, and I’d like to share a video with you that my friend shared with me the other day. It’s footage of a couple’s journey from China to South Africa. It’s beautifully edited and shows that strangers from all different areas of the world can connect, bond, and support each other. It’s truly inspiring and tirelessly uplifting to be reminded of that–just like you all have reminded me through this blog. I hope it brightens your day. Thanks again :)

    Wow, congrats! It’s so nice to be recognized. I love this recipe. Salsas really hit the spot in the summer and fresh cilantro is just perfect.

      Thank you so much!! The recipe originally called for kiwi instead of mango. I think kiwi would have tasted great as well, but I couldn’t help adding the mango because of the beautiful color!! :)
